Martini Modern Italian occupies a lane that Columbus fills mostly with red-sauce houses and a handful of tasting counters, and it earns its keep in the space between: contemporary Italian cooking built for anniversaries and engagement dinners rather than weeknight pasta runs. Risotto anchors the kitchen's identity, the dish that separates a serious Italian menu from a reheated one; a proper risotto demands a slow hand with stock and constant attention to starch release, and its presence as a signature suggests a kitchen willing to do the unglamorous work rather than lean on shortcuts.
